Even NASA is impressed by quinoa nutritional facts. They are currently studying it as a potential crop for their Controlled Ecological Life Support System program. They are looking into the viability of growing quinoa in space on long term space missions in the future.
Quinoa is very high in protein, containing between 12% and 18% of protein content. How the saponin is removed accounts for the variance. Most experts agree that the protein quality is equal to milk. Quinoa is especially unique because it offers all eight of the essential amino acids. Lysine is not found in other grains (other than amaranth) but it is present in abundance in quinoa.
In addition to being a great source of amino acids, protein and carbohydrates, quinoa is also abundant in vitamins and minerals. It is load with riboflavin, calcium, iron, phosphorous and magnesium.
Since it is becoming more popular, quinoa recipes are very easy to find. Because quinoa is so versatile, you can enjoy it at any meal. It is great in stir fry recipes, quinoa salad, and soups. You can even mix quinoa with oatmeal to make a great breakfast cereal.
